1.Introduction: Carrageenan is natural polysaccharide hydrophilic colloid extracted from Marine red alga with the color white to light yellow powder and odourless tasteless,It is a copolymer consisting of calcium, magnesium, potassium, sodium,sulfate galactose and 3, 6 - dehydration galactose.The product is obtained by water extraction from algae eucheuma and have high transparency and gel strength etc.
In food industry,it is used as gelling agent, stabilizer, thickener, suspending agent and water bonding agent etc.It can stable emulsion, control fluid contraction, informs, cementation and dispersion, etc.
2.Major Characteristic: Natural thickening,gel effect stable, formation of different gel texture,high transparency,excellent release the fragrance,strong adaptability of process.
